So you planned ahead and meal prepped a whole chicken. Amazing! But now it’s Wednesday and you are staring in the fridge thinking, “plain chicken…again?!”
Don’t worry, I got you.
I hate wasting food but I’m also not a fan of having the same thing every day, either. Here are five delicious and different ways to serve up your chicken with stuff you already probably have in your pantry.
Chicken Salad on Ezekiel Toast
I love chicken salad! Especially with my meal-prepped chicken. I like to make sure that I take a huge handful of greens like spinach or celery or kale (or even my meal-prepped veggies!), chop them up and add to the chicken salad so I am still getting veggies. Instead of mayo, use ½ avocado, 1 tsp of dijon mustard, a lemon squeeze & S&P. Serve open-faced on a toasted piece of Ezekiel Bread.
Chicken Stir Fry
What is not to love about a stir fry? You can basically throw whatever you want in a pan, saute with some low sodium soy sauce (or coconut aminos for GF) and you have a simple and tasty dinner. If you have meal-prepped a grain, like quinoa or rice, make sure to add that as well.
Thai Chicken Lettuce Wraps
I LOVE using a sturdy green like Collard Greens or Swiss Chard as a wrap instead of bread. These leaves are tasty and they ensure you are getting some greens in. So cut up your chicken, warm it up with your veggies of choice and whip up this really simple clean Thai Peanut Dressing to go on top.
Soups are always a good idea when you have a fridge full of random ingredients and can’t quite put your finger on what to make. I usually just throw my fridge-clean-out in a pot with Low Sodium Broth and call it day. I usually like to add a grain or a sweet potato to get some heartiness in there.
Who doesn’t love Mexican style food? The greatest thing about using different spices is that you can change it up and have something completely different. I grew up loving Fajitas and still do! You can also wrap these in a lettuce wrap if you’re craving more of a sandwich feel.
