Easy Quinoa Fajita Bowl


  • 1 cup quinoa
  • 1 tbsp olive oil
  • 1/2 onion sliced
  • 2 peppers sliced
  • 1 clove garlic minced
  • 30 oz cooked black beans or 2 cans, drained and rinsed
  • 1/4 tsp chili powder mild
  • Pinch cayenne pepper spicy
  • juice of 2 limes
  • 3 fistfuls of lettuce (kale, spinach or iceberg) 
  • Salt

Optional Topping Ingredients

  • Greek yogurt
  • Pico de gallo
  • Salsa
  • Diced seeded tomatoes
  • Hot sauce or sriracha
  • Sliced avocado
  • Guacamole
  • Corn



  1. In a pot, cook quinoa according to directions on package
  2. In a pan, heat 1 tbsp of olive oil over medium heat
  3. Add peppers and onions and simmer for ~7 min until soft
  4. Add garlic and simmer for another 2 min
  5. Add Black beans to the pan with 1/2 cup of water
  6. Add chili powder & cayenne pepper
  7. Bring the beans to a boil, then reduce heat to medium-low.
  8. Let beans simmer for 15 min until liquid is evaporated
  9. Squeeze 1 lime over beans
  10. Season with salt to Taste
  11. Assemble your bowl by layering quinoa, beans/pepper/onion mixture, and lettuce.
  12. Add your favorite toppings!
