Ingredients
- 1 cup quinoa
- 1 tbsp olive oil
- 1/2 onion sliced
- 2 peppers sliced
- 1 clove garlic minced
- 30 oz cooked black beans or 2 cans, drained and rinsed
- 1/4 tsp chili powder mild
- Pinch cayenne pepper spicy
- juice of 2 limes
- 3 fistfuls of lettuce (kale, spinach or iceberg)
- Salt
Optional Topping Ingredients
- Greek yogurt
- Pico de gallo
- Salsa
- Diced seeded tomatoes
- Hot sauce or sriracha
- Sliced avocado
- Guacamole
- Corn
Directions
- In a pot, cook quinoa according to directions on package
- In a pan, heat 1 tbsp of olive oil over medium heat
- Add peppers and onions and simmer for ~7 min until soft
- Add garlic and simmer for another 2 min
- Add Black beans to the pan with 1/2 cup of water
- Add chili powder & cayenne pepper
- Bring the beans to a boil, then reduce heat to medium-low.
- Let beans simmer for 15 min until liquid is evaporated
- Squeeze 1 lime over beans
- Season with salt to Taste
- Assemble your bowl by layering quinoa, beans/pepper/onion mixture, and lettuce.
- Add your favorite toppings!
